These crispy fritters are coated in an Indian spiced batter and fried until crisp and golden. Like many Indian recipes, keto onion pakoda is made differently in various parts of India. It is one snack that is easy to prepare and tastes good too.These are a great sharing snack or starter served with a bowl of cooling yogurt dip or cucumber salsa.

Ingredients
  

  • 1/2 cup onions – finely chopped
  • 1- inch ginger – finely chopped
  • 4 green chilies – finely chopped
  • 4 curry leaves – finely chopped
  • 1 tbsp cilantro – finely chopped
  • 2 tbsp peanuts – crushed
  • 1/4 tsp baking powder
  • 1/4 tsp turmeric
  • 1 tsp cumin – whole
  • 2 tsp chili powder
  • 1 tsp salt – adjust to taste
  • 1 cup almond flour
  • 2 eggs – large

Instructions
 

  • In a bowl mix ginger, onion, green chilies, curry leaves, cilantro, peanuts(crushed), baking powder, turmeric powder, cumin, chili powder, salt, almond flour, and eggs.
  • Mix well. Turn on a deep fryer with vegetable oil (or oil of choice) and set at 350° F or heat up the pot on stovetop on medium with enough oil to enable deep frying.
  • Once the oil is heated up, scoop a spoonful of the pakora mix and drop it into the oil. Add a few scoops of the mix at once with an amount depending on the size of the deep fryer or pot. It should take some time (approx. 3-5 minutes) and turn brown in color.
  • When each step is done place the pakora on a plate with a paper towel to absorb extra oil.
  • Serve hot with a choice of keto-friendly sauce.
